Ingredients

  • Chicken Breast or Thighs - 4 to 6
  • Bacon - 4 slices
  • Onion - 1 medium size sliced thinly
  • Bell Peppers / Capsicum - ½ sliced thinly
  • Salt to taste
  • Oregano - ½ tsp
  • Red Chilli Flakes - 1 tsp
  • Cheese Slice - 2
  • Oil - 3 to 5 tblspn
  • For Coating:
  • Egg - 1
  • Breadcrumbs - 1 cup
  • Chilli flakes - 1 tsp
  • Salt to taste

Instructions

  • Take bacon and chop them into small pieces. Pop them into frying pan, and cook them till golden and crispy. Drain them to some paper towel.
  • Now drain off excess fat, add in onions, bell peppers and saute till done.
  • Add in little salt, chilli flakes, oregano and mix well. Add bacon and toss well. Filling done.
  • Take breadcrumbs, chilli flakes, salt in a bowl and set aside. Beat a egg well and set aside.
  • Take chicken breast or thigh over a sheet of plastic wrap and cover with another sheet of plastic wrap.
  • Bash it well with a rolling pin to make it thin and even.
  • Place a cheese slice over each chicken, spoon the pepper bacon filling over it and roll it carefully.
  • You can wrap it with plastic wrap and chill it for 30 mins to make it firm.
  • Now coat the chicken in egg and roll it in breadcrumbs. Secure the chicken with toothpick.
  • You can freeze this for 15 mins if needed.
  • Preheat oven to 180 degree C.
  • Heat oil in a frying pan, place chicken over it and cook till golden on both sides.
  • Place this in a foil lined baking tray and pop it in oven for 15 mins.
  • Remove it from oven, remove the toothpick. Serve.
