Cilantro Pesto Recipe | How to Make Pesto from Coriander Leaves

Ingredients

  • Cilantro / Coriander leaves-1 bunch
  • Olive oil- ¼ cup
  • Garlic-1 small clove
  • Parmesan-½ cup grated
  • Almonds / Badam - 15 blanched
  • Onion- ¼ chopped
  • Salt to taste

Instructions

  • To blanch almonds, Put almonds in hot water for 15 mins. After that take it press it, the peel comes off right away.
  • In a blender add cilantro, garlic, onion salt and pulse it for few times.
  • Add in almonds, cheese and pulse it till almonds gets broken up.
  • Add in olive oil in a steady stream with the blender on till it gets mixed in and everything looks blended well.
  • Tip this into a bowl and add in some more oil in this. Mix well.
  • Store this in fridge for upto a week. You could use this for making pizza, pasta and many more.
