Ingredients

  • ¾ cup All Purpose Flour 90 grams
  • ½ tsp Baking Powder
  • Salt a pinch
  • 2 Eggs
  • 120 grams Unsalted Butter
  • ½ cup Sugar 100 grams
  • 1 tsp Vanilla Essence
  • ½ tsp Strawberry Essence optional
  • 6 tbsp Strawberry Jam
  • My 1 cup measures 240 ml

Instructions

  • Preheat oven to 160 degree C.
  • Grease a 18 cm square cake pan with oil and dust it with flour. Coat it on all sides and tap off the excess.
  • Take flour, baking powder and salt in a sieve and sift it well. Set aside.
  • Take butter, sugar, in a bowl and whip till creamy.
  • Now add in vanilla, strawberry essence and eggs in the bowl and whip till creamy.
  • Now add in the flour mix in and fold gently.
  • Spoon this into the pan and spread evenly.
  • Now dollop the fruit spread here and there and use a toothpick to swirl it.
  • Now bake this for 30 mins.
  • Remove it and let it cool down.
  • Cut into squares and enjoy.
