Jam Swirled Coffee Cake Recipe – Strawberry Jam Swirled Cake Recipe

Including jams in cakes is my favourite, because they add a little zing to the cakes and makes it little sticky and moist. This is a cake which has a swirled jam over it and it adds a little design over the cake and makes it taste so yummy.

Basic Vanilla Cake with Eggs
The cake itself is a moist butter cake, which is so soft and fluffy. The jam which i used in this is J.M. Smucker’s® Fruit and Honey Strawberry Fruit Spread. It is a unique jam because it is sweetened with honey and not sugar..It is available in walmart. There are 4 flavours available like blueberry lemon, triple berries, strawberry and tropical. The one which is used is strawberry because i love strawberry jam more than anything else..

Preparation Time : 15 mins
Baking Time : 25 to 30 mins
Makes : 9 to 12 squares

Ingredients:
All Purpose Flour / Maida – 3/4 cup / 90 grams
Baking Powder – 1/2 tsp
Salt a pinch
Eggs – 2
Unsalted Soft Butter – 120 grams
Sugar – 1/2 cup / 100 grams
Vanilla Essence – 1 tsp
Strawberry Essence – 1/2 tsp (optional)
J.M. Smucker’s® Fruit and Honey Strawberry Fruit Spread – 6 tblspn

(My 1 cup measures 240 ml)
Method:
Preheat oven to 160 degree C.
Grease a 18 cm square cake pan with oil and dust it with flour. Coat it on all sides and tap off the excess.
Take flour, baking powder and salt in a sieve and sift it well. Set aside.
Take butter, sugar, in a bowl and whip till creamy.
Now add in vanilla, strawberry essence and eggs in the bowl and whip till creamy.
Now add in the flour mix in and fold gently.
Spoon this into the pan and spread evenly.
Now dollop the fruit spread here and there and use a toothpick to swirl it.
Now bake this for 30 mins.
Remove it and let it cool down.
Cut into squares and enjoy.

measure all your ingredients and set aside
grease a baking pan with oil and coat it with flour
take flour in a bowl
add in baking powder
and salt
sieve well and set aside
take butter in a bowl
add in sugar
use a beater to whip this up
now it is all creamy
add in vanilla essence
add little strawberry essence
add in eggs
whip till creamy
add in flour mix in
whip till mixed
fold gently using a spatula
spoon this into the pan
spread it evenly
dollop strawberry fruit spread over it
use a toothpick to swirl it
like this
now time to bake
now it is all baked and beautiful
let it cool down, now invert it into the cutting board
cut into squares
Serve
These cakes are so soft and has a little tart from the fruit spread..Totally addictive..

    Hi aarthi. I was going thru all ur cake recipes today. Have a question. I have a loaf bakeware only. Can these non_loaf cake recipes be made in loaf bakeware with same ingredients and bake time? I do not want to invest more rt now on bakeware. Just a newbie. Please advise

    @deepsi am not sure, all the recipes can be made in that..U have to use a shallow square of round pan
