- ½ kg Brinjals Chopped
- ½ teaspoon Cumin Seeds
- ½ teaspoon Mustard Seeds
- ½ teaspoon Turmeric Powder
- Salt to taste
- 3 tablespoon Oil
- Coriander Leaves for garnishing
- To Grind:
- 1 tablespoon Coriander Seeds
- 1 teaspoon Cumin Seeds
- 3 Green Chilli
Grind all the ingredients given to grind. Grind it to a fine paste and set aside.
Heat oil in a kadai. Add cumin and mustard seeds and mix well.
Add turmeric powder and mix well. Add brinjals and mix well.
Cover and simmer for 5 mins until half cooked.
Now add in ground masala and mix well. Cook uncovered for 5 mins until the brinjal is cooked and slight crisp.
Garnish with coriander leaves and serve hot with rice.
