Baingan Ki Sookhi Sabzi Recipe (Rajasthani Brinjal Recipe)

Ingredients
  

  • ½ kg Brinjals (Small brinjal) cut into quarters
  • Salt to taste

For Tempering

  • 3 tablespoon Groundnut Oil
  • ½ teaspoon Cumin Seeds
  • ½ teaspoon Mustard Seeds
  • ½ teaspoon Turmeric Powder

For Fresh Masala (To Grind)

  • 1 tablespoon Coriander Seeds
  • 1 teaspoon Cumin Seeds
  • 3 no Green Chillies

For Garnishing

  • 4 tablespoon Coriander Leaves chopped finely

Instructions
 

  • Take all the ingredients given for fresh masala in a blender. Grind it to a coarse paste and set aside.
  • Heat oil in a kadai. Add cumin and mustard seeds and let them splatter. Add in turmeric powder and mix well in the oil.
  • Now add in the brinjals and toss well in the oil. Sprinkle salt on it and mix well. Cover and simmer for 5 mins until half cooked.
  • Now add in ground masala and mix well. Cook uncovered for 5 mins until the brinjal is cooked  and slight crisp.
  • Garnish with coriander leaves and serve hot with rice.
