    Baingan Ki Sookhi Sabzi Recipe with step by step pictures. This rajasthani style brinjal dish taste absolutely delicious.

     

    Baingan Ki Sookhi Sabzi (Rajasthani brinjal Recipe)

    This is a quick stir fry brinjal dish with lots of flavours packed in it..This taste great with plain white rice and any gravy. I made some lovely rasam to go along with it, the meal was awesome. Try to cook the brinjals carefully, because it tends to go mushy so easily.

    How to Make Baingan Ki Sookhi Sabzi (Rajasthani Brinjal Recipe)

    1. Grind all the ingredients given to grind. Grind it to a fine paste and set aside.
    2. Heat oil in a kadai. Add cumin and mustard seeds and mix well.
    3. Add turmeric powder and mix well. Then Add brinjals and mix well.
    4. Cover and simmer for 5 mins until half cooked.
    5. Now add in ground masala and mix well. Cook uncovered for 5 mins until the brinjal is cooked  and slight crisp.
    6. Garnish with coriander leaves and serve hot with rice.

    Ingredients

    • ½ kg Brinjals Chopped
    • ½ tsp Cumin Seeds

    • ½ tsp Turmeric Powder
    • Salt to taste

    Take all your ingredients

     

    Ingredients needed for grinding

     

    take it in a blender

     

    and puree it

     

    chop the brinjals

     

    heat oil

     

    add cumin and mustard

     

    add turmeric

     

     brinjals

     

    and mix well

     

    add salt

     

    and mix well

     

    cover and cook

     

    until the brinjal is half cooked

     

    add the ground spices

     

    and mix well

     

    and fry for few more minutes

     

    garnish with coriander leaves

     

    and mix well

      This is an awesome recipe. If my teenage son loves it, it must be really good. I prepared it from a large type brinjal picked fresh from my garden. Your wepage however is extremely slow to load. I appreciate the pictures but these pictures are probably making it a pain to view your page. Thank you so much for a great recipe. I followed it without any modifications.
