1 large Brinjal / Baingan 2 tablespoon + for shallow frying Oil ½ teaspoon Mustard Seeds / Kaduku ½ teaspoon Cumin Seeds / Jeerakam 1 medium chopped finely Onion 2 chopped Green Chillies 1 teaspoon Ginger Garlic Paste 1 teaspoon Chilli Powder 2 teaspoon Coriander Powder / Malli Podi 1 teaspoon Turmeric Powder / Manjal Podi Salt to taste 2 Tomatoes chopped finely 1 cup Water
Cut brinjal into thick rounds, now cut each rounds into strips.
Heat oil for shallow frying. Drop brinjal in and fry till golden. Remove and set aside.
Now drain most of the oil from the pan, keep just 2 tblspn in it.
Add in mustard and cumin. let them pop.
Now add in onions, chillies and saute till golden.
Add in ginger garlic paste and saute for a min or so.
Add in salt and spice powders and mix well.
Now add in tomatoes and cook for couple of mins, add in a splash of water and cook till tomatoes turn mushy.
Now add in another splash of water and when it starts to bubble, add in fried brinjal and mix. Simmer for 5 mins or so.
Serve.
