Sweetcorn is coated with flour mixture and deep fried till super crispy and tossed with onions, green chillies, coriander leaves, lemon and peri peri seasoning. I used frozen sweetcorn. So I just placed it in microwave and cooked for 1 min. If you are using fresh sweetcorn, then boil in water for 4 to 5 mins. Strain the corn completely so water is drained.
Now take corn in a bowl. Add salt, black pepper powder, rice flour, plain flour, cornstarch and toss well. Place it into a fine mesh sieve and shake so the excess flour is removed.
Heat oil for large deep frying till it gets super hot. Drop sweet corn in the hot oil. Once it is added, don't mix it immediately. Let it fry on high heat for 1 minute till bubbles subside. Now continue frying until corn gets super crispy. Fry till super crispy and golden. Around 3 to 4 mins.
Strain corn and add it over a paper towel to remove excess oil. Now add it back in a bowl or sieve. Add in peri peri seasoning, onions, green chillies, coriander leaves, lemon juice and toss well.
Crispy corn loses its crispy texture as it sits. So enjoy them immediately as it is made.
