Ingredients
  

  • Cooked Rice - 3 cups
  • Beetroot - 1 large peeled and grated
  • Oil or Ghee - 2 tblspn
  • Mustard Seeds / Kaduku - 1 tsp
  • Urad dal / Ulundu Paruppu - 1 tsp
  • Asafoetida / Hing / Kaya Podi - a pinch
  • Ginger Garlic Paste - 2 tsp
  • Chilli Powder - 1 tsp
  • Turmeric Powder - ½ tsp
  • Salt to taste

Instructions
 

  • Heat oil in a pan, add mustard, urad dal and asafoetida and let them sizzle.
  • Add in ginger garlic paste and cook for a min.
  • Add in beets and saute for couple of mins.
  • Add salt and spices and mix well.
  • Add cooked rice and toss well.
  • Pack in your kids lunch box.
