Beetroot rice is a quick lunch recipe which you can whip up in few minutes. I suggest you to cook the rice the day before and store in fridge, so the next day you can make this in a jiffy. Not only it is tasty but it is very nutritious to your kids.

Serves: 2
Cooked Rice – 3 cups
Beetroot – 1 large peeled and grated
Oil or Ghee – 2 tblspn
Mustard Seeds / Kaduku – 1 tsp
Urad dal / Ulundu Paruppu – 1 tsp
Asafoetida / Hing / Kaya Podi – a pinch
Ginger Garlic Paste – 2 tsp
Chilli Powder – 1 tsp
Turmeric Powder – 1/2 tsp
Salt to taste
Method:
Heat oil in a pan, add mustard, urad dal and asafoetida and let them sizzle.
Add in ginger garlic paste and cook for a min.
Add in beets and saute for couple of mins.
Add salt and spices and mix well.
Add cooked rice and toss well.
Pack in your kids lunch box.
