- 2 sliced into rounds Green Long Brinjal
- ½ cup grated Coconut
- 3 tblspn Oil
- 1 teaspoon Mustard seeds / Kaduku
- ¼ teaspoon Fenugreek seeds / Vendayam / Methi
- 1 teaspoon Urad dal / Ulundu Paruppu
- a pinch Asafoetida / Hing / Kaya podi
- 2 sprig Curry leaves
- 1 medium size chopped Onion
- 10 peeled Garlic
- 3 tblspn Chettinad Kuzhambu Masala Powder
- Water as needed
- 2 tblspn Tamarind Pulp
- Salt to taste
- 1 tspMethod: Sugar
Grind coconut into smooth paste. Set aside
Heat oil in a kadai. Add in mustard, urad dal, fenugreek and curry leaves.
Now add in onions, garlic and saute for a min.
Add in brinjal and saute well.
Add in the masala powder and saute well.
Add in water, tamarind pulp, salt and sugar and mix well. now simmer this whole thing for 10 mins.
Add in coconut and mix well. Simmer for 10 mins.
Serve.
