    Brinjal Coconut Pulikuzhambu Recipe

    Its been a while since i posted any kuzhambu recipes. SO i made this yesterday and i am sharing it with you..I have posted so many kuzhambu recipes in my blog.Similar Recipes,

    This is a gravy which i made using green long variety brinjal. This gravy has coconut in it.

    Preparation Time : 10 mins
    Cooking Time : 35 mins
    Serves: 4

    Ingredients:Green Long Brinjal - 2 sliced into rounds
    Coconut - ½ cup grated
    Oil - 3 tblspn
    Mustard seeds / Kaduku - 1 tsp
    Fenugreek seeds / Vendayam / Methi - ¼ tsp
    Urad dal / Ulundu Paruppu - 1 tsp
    Asafoetida / Hing / Kaya podi - a pinch
    Curry leaves - 2 sprig
    Onion - 1 medium size chopped
    Garlic - 10 peeled
    Chettinad Kuzhambu Masala Powder - 3 tblspn
    Water as needed
    Tamarind Pulp - 2 tblspn
    Salt to taste
    Sugar - 1 tspMethod:

    Grind coconut into smooth paste. Set aside

    Heat oil in a kadai. Add in mustard, urad dal, fenugreek and curry leaves.

    Now add in onions, garlic and saute for a min.

    Add in brinjal and saute well.

    Add in the masala powder and saute well.

    Add in water, tamarind pulp, salt and sugar and mix well. now simmer this whole thing for 10 mins.

    Add in coconut and mix well. Simmer for 10 mins.

    Serve.
