Brinjal Paruppu Kuzhambu Recipe

This is one of the kulambu which i make often, the only thing i do is change the veggies added in this. It is so easy to make and you will love it for sure..

Ingredients
  

  • 1 Brinjal chopped
  • 1 Drumstick chopped
  • 1 teaspoon Tamarind Pulp or to taste
  • Salt to taste

For Dal:

  • ½ cup Yellow Moong Dal / Pasi Paruppu
  • ½ teaspoon Salt
  • cup Water

For Masala:

  • ½ cup Coconut grated
  • 1 teaspoon Chilli Powder
  • 1 tablespoon Coriander Powder / Malli Podi
  • 1 teaspoon Cumin Seeds / Jeerakam
  • 1 teaspoon Turmeric Powder / Manjal Podi

For Seasoning:

  • 1 tablespoon Coconut Oil
  • 1 teaspoon Mustard Seeds / Kaduku

Instructions
 

  • Take dal in a pan, add water and turmeric. Bring it to boil, cover and simmer till the dal is cooked. Set aside.
  • Take the grinding masala ingredients in a blender and make it into a fine puree. Set aside.
  • Take brinjal and drumstick in a kadai, Add in little salt and water. Cook till the veggies are done.
  • Now add in dal, and mix well. Add in tamarind pulp and simmer for few more mins.
  • Add in masala and mix well. Bring it to boil.
  • Now make seasoning by heating oil and crackling mustard. POur this into the curry and mix well.
  • Serve.
