Ingredients

Gingelly Oil - ¼ cup
Mustard Seeds / Kaduku - 1 tsp
Curry Leaves - 1 sprig
Onion - 1 large sliced thinly
Tomato - 1 chopped
Garlic - 10 cloves
Brinjal - 3 chopped
Turmeric Powder - 1 tsp
Salt to taste
Chilli Powder - 1 tsp
Coriander Powder - 3 tblsp
Cumin Powder - 1 tsp
Tamarind - 1 small lime size
Water as needed
Pepper Powder - 2 tsp
Sugar or Jaggery - 1 tsp
Instructions
Heat oil and crackle in mustard, curry leaves.
Add onions, garlic and tomatoes and saute for a min.
Add brinjal and saute for 2 mins.
Add in spice powders and mix well.
Add tamarind water, water, salt and sugar. Simmer for 5 to 6 mins.
Add pepper powder and mix well.
Serve.
