Brinjal Pepper Masala Recipe
Ingredients
- Gingelly Oil - ¼ cup
- Mustard Seeds / Kaduku - 1 tsp
- Curry Leaves - 1 sprig
- Onion - 1 large sliced thinly
- Tomato - 1 chopped
- Garlic - 10 cloves
- Brinjal - 3 chopped
- Turmeric Powder - 1 tsp
- Salt to taste
- Chilli Powder - 1 tsp
- Coriander Powder - 3 tblsp
- Cumin Powder - 1 tsp
- Tamarind - 1 small lime size
- Water as needed
- Pepper Powder - 2 tsp
- Sugar or Jaggery - 1 tsp
Instructions
- Heat oil and crackle in mustard, curry leaves.
- Add onions, garlic and tomatoes and saute for a min.
- Add brinjal and saute for 2 mins.
- Add in spice powders and mix well.
- Add tamarind water, water, salt and sugar. Simmer for 5 to 6 mins.
- Add pepper powder and mix well.
- Serve.
