Super simple brinjal poriyal or stir fry which can be made in less than 15 mins. This makes a great sidedish for rice, but i love with roti too.

- Brinjals - 5 to 6 medium size cubed
- Oil - 2 to 3 tblsp
- Salt to taste
- Turmeric Powder - 1 tsp
- Chilli Powder - 1 tsp
- Pepper powder - 1 tsp
Heat oil in a nonstick pan, add brinjal and toss well.
Add salt and turmeric powder and mixwell. Cover and cook for 5 to 10 mins.
Now add in chilli powder and pepper powder.
Mix well.
Serve with roti or rice.
