    Brinjal Poriyal Recipe - Kathirikai Poriyal Recipe - Simple Brinjal Recipes.

    Super simple brinjal poriyal or stir fry which can be made in less than 15 mins. This makes a great sidedish for rice, but i love with roti too.

    This has become one of my favorite recipe of all kinds of brinjal recipes in this blog. You know i have quite a few brinjal recipes in this blog and this one has taken its special place. Because this recipe is from my mom, she absolutely loves brinjal and makes it like two or three times a week.

    As a kid i never liked brinjals. I thought it is one of the disgusting veggie, but as a adult it is my favourite.

    This roast pairs beautifully with rice and plain dal.

    Even though it is a very simple recipe, i thought of sharing it here because it may come handy in the busy morning. I like to add some pepper powder in my poriyal because it adds nice flavour.

    This poriyal taste amazing when mixed with hot steamed rice drizzled with some indian sesame oil (nala ennai) or ghee. Super good. I enjoy this with some hot phulkas too.

    Ingredients

    • Brinjals - 5 to 6 medium size cubed
    • Oil - 2 to 3 tblsp
    • Salt to taste
    • Turmeric Powder - 1 tsp
    • Chilli Powder - 1 tsp
    • Pepper powder - 1 tsp

    Instructions

    • Heat oil in a nonstick pan, add brinjal and toss well.
    • Add salt and turmeric powder and mixwell. Cover and cook for 5 to 10 mins.
    • Now add in chilli powder and pepper powder.
    • Mix well.
    • Serve with roti or rice.

    Pictorial:

    1)Take your brinjals and wash well.

    2)Cut them into cubes

    3)Heat oil in a nonstick pan

    4)Add in brinjals

    5)Mix well in the oil. and Add some salt to taste.

    6)Add in turmeric powder

    7)Mix well

    8)Cover and cook for 5 to 10 mins

    9)Now the brinjals are done

    10)Add in chilli powder to taste

    11)Add some pepper powder. This will add nice flavour.

    12)Toss well

    13)Serve
