Brownie pudding is a decadent chocolate dessert that is between a brownie, a lava cake, and a pudding. The exterior is crispy and crackly while the middle is gooey and molten. The recipe first appeared on Barefoot Contessa way back in 2008 (in Barefoot Contessa: Back to Basics) and has exploded viral recently.
Preheat oven to 160 degree c (325 degree F). Melt the butter in a sauce pan and allow it to cool before using. Grease a 5x7 Baking pan generously with butter and set aside.
Take eggs, sugar, vanilla extract in a bowl and use an electric mixer to beat this until pale, light and frothy. Now add in the brewed coffee and mix until combine. Now add in plain flour, cocoa powder and mix until combined. Now pour in melted butter little at a time and mix until combined.
Transfer this to the greased baking dish. Place the baking dish on a bigger baking tray with high sides. Pour boiling water into the bigger baking tray. Fill the water until the water comes half way through the baking pan. Carefully place the pan into the preheated oven and bake for 1 hour.
After 1 hour remove the pan from the oven. Remove the brownie pan carefully and allow to cool briefly. Scoop and serve with some vanilla ice cream or whipped cream.
