    Brownie Pudding(Viral Recipe)

    Brownie pudding is a decadent chocolate dessert that is between a brownie, a lava cake, and a pudding. The exterior is crispy and crackly while the middle is gooey and molten. The recipe first appeared on Barefoot Contessa way back in 2008 and has exploded the internet recently.

    Do I need one more brownie recipe on this blog? Yes, I do. Because this one isn't just a brownie, it's rich, gooey, and melts like a pudding in the centre One spoon in, and you'll know exactly why this recipe is viral.

    About Brownie Pudding

    Brownie pudding has completely taken over my Instagram feed, and the moment I saw it, I knew I had to make it. I didn't wait long, straight into the kitchen I went, and honestly, I'm so glad I did. What came out of the oven was pure chocolate goodness.

    This is Ina Garten brownie pudding recipe which first appeared way back in 2008, made its entry again now. The recipe is easy to follow and uses simple ingredients like eggs, sugar, vanilla, flour, cocoa and melted butter. Ina Garten adds 1 tablespoon of framboise (raspberry liqueur) to enhances the chocolate's fruity notes. You can skip it if you don't have it, and the dessert is still amazing. But I used 1 tablespoon of coffee to provide intense chocolate flavour. 

    Even though the ingredients and recipe looks same as a brownie. What makes it different is the eggs and sugar are beaten until thick and pale which helps form a shiny crust. Second the batter is placed in a water bath (bain-marie) while baking to ensure even cooking and that unique molten centre. Third is baking at a low temperature for a long time which gives you that set outside and pudding like inside.

    Brownie Pudding taste best served warm with vanilla ice cream which is the most popular way. You ca top them with whipped cream for light taste.

    This Brownie pudding has exploded the internet for a reason. What I loved about this brownie pudding is the outer exterior is crackly and crispy while the centre is so gooey and molten like. It has an intense chocolate flavour almost like a sticky pudding texture taste best with ice cream. This is very similar to my self saucing chocolate pudding.

    Ingredients 

    Eggs - use extra large eggs for this recipe, there is no alternative to eggs.

    Sugar - granulated sugar is used in this recipe which provides the sticky texture. You can use brown sugar but it may alter the texture. 

    Plain flour - very little flour is added in the pudding which makes the centre so gooey and sticky.

    Cocoa - use unsweetened cocoa powder and try to source the best quality because the taste of this dish purely depends on the cocoa you use. 

    Coffee & Vanilla - purely for flavour and taste.

    Butter - unsalted butter is melted, cooled before adding into the batter. 

    Step by Step Pictures

    1)Preheat oven to 160 degree c (325 degree F). Melt the butter in a sauce pan and allow it to cool before using. Grease a 5x7 Baking pan generously with butter and set aside. 

    Take eggs, sugar, vanilla in a bowl. Use an electric mixer to beat this until pale, light and frothy.

    2)This step takes atleast 4 to 5 minutes. Sometimes it may take longer.

    3)This is how frothy the mixture should look like.

    4)Now add in the brewed coffee and mix until combine.

    5)Now add in plain flour, cocoa powder and mix using an electric beater until combined.

    6)Use a spatula to scrape the sides and bottom so it is combined well.

    7)Now pour in melted butter little at a time and mix until combined. 

    8)Chocolate brownie pudding batter is ready.

    9)Transfer this to the greased baking dish. Place the baking dish on a bigger baking tray with high sides.

    10)Pour boiling water into the bigger baking tray. Fill the water until the water comes half way through the baking pan.

    11)Carefully place the pan into the preheated oven and bake for 1 hour. 

    12)After 1 hour remove the pan from the oven. Remove the brownie pan carefully and allow to cool briefly.

    13)Scoop and serve with some vanilla ice cream or whipped cream.

    Ingredients
      

    • 2 large Eggs
    • 1 cup Granulated Sugar 200 grams
    • 1 teaspoon Vanilla Extract
    • 1 tablespoon Strong Brewed Coffee or (1 teaspoon instant coffee mixed with 1 tablespoon water)
    • 6 tablespoon Unsweetened Cocoa Powder 40 grams
    • ¼ cup All Purpose Flour Plain Flour 30 grams
    • 115 grams Unsalted Butter (1 stick or ½ cup

    Instructions
