Ingredients

large Carrots chopped finely
▢

chopped finely Spring Onion
both green and white part
▢
Salt to taste

Coconut Oil

Mustard Seeds / Kaduku

Urad dal / Ulundu Paruppu

Dry Red Chilli

For Grinding:
▢
¾
cup
freshly grated Coconut

Cumin Seeds / Jeerakam

Shallots / Sambar Onion

Instructions
▢
Take all the ingredients give for grinding in a blender and grind them without adding water.
▢
Heat oil in a kadai. Add in mustard, urad dal and dry red chilli. Saute them for 30 seconds.
▢
Now add in carrots and spring onions. Saute them well in oil. Season with salt.
▢
Cover this with a lid and let it cook on a low heat for 5 to 8 mins.
▢
Now open the lid and give a stir. Add in the ground masala and toss well with the veggies. Cook them for couple of mins..
▢
Switch off the stove and serve.
