Cheese Straws are a fun recipe to make at home. Cheese straw is made with plain flour, butter, grated cheese and seasoning. Easy to make snack for kids and you can serve cheese straw on the side of some hot soups or enjoy on its own with a cup of tea or coffee. Preheat oven to 190 degree C | 374 Degree F. Line a baking tray with parchment and set aside.
Take flour, salt in a bowl and mix well. Add in shortening and rub it into the flour. Sprinkle in cheddar cheese and mix well. Add a egg yolk and mix well. Shape it into a dough. If the dough is crumbly add some cold water. Now wrap the dough in plastic wrap and place in fridge for 30 mins.
Now roll the dough into a rectangle sheet between sheets of parchment paper. Cut into sticks. Roll each stick gently into a smooth log like. Place on a parchment lined tray. Brush the top with some water. Sprinkle more cheese on top. Bake this in a 190 degree c preheated oven for 15 minutes.
Remove and cool completely before serving. Store in an air tight container.

Make sure your dough is completely chilled before cutting into straws and baking.
Instead of shortening, you can use cold butter into the flour.
Be generous with the cheddar cheese which adds flavour.
You can add dried herbs and seasoning into the flour mixture for more flavour.
Dried chives, oregano, chilli flakes can be used in the dough.
Instead of egg yolk, you can use some water. But egg yolk helps with the binding.
