These cookies are a comforting, spiced cookie with soft centre and lightly crisp edges which is infused with warm flavours like cinnamon, cloves and dry ginger powder. These cookies are crisp on the outside with tender, soft on middle. It can served with a cup of milk.
Dry Ingredients - Take flour, cinnamon, cloves, salt, baking soda and ginger in a bowl and mix well using a whisk until the spices are evenly mixed. Set aside.
Creaming Butter with Sugar - Take butter, granulated sugar which is powdered in a bowl and beat with an electric beater till creamy. Add in egg and honey, whip again till creamy.
Making cookie dough - Now add in the dry ingredients mix and mix well to form a sticky dough. Cover the bowl with plastic wrap and place in fridge to rest and chill for 30 mins to 1 hour.
Scooping cookies - Use an ice cream scoop to scoop the dough and shape it into smooth ball, roll it out and place it in granulated sugar and roll it well. Place it in a plate and flatten it lightly. Now pop this in fridge and chill for another 15 mins to firm the cookies just a bit.
Pre prep - Meanwhile Preheat oven to 190 degree C (374 degree F). Line a baking sheet with parchment paper and set aside.
Baking cookies - Now arrange the cookies on a baking tray lined with parchment. Leave space between cookies as they will spread a lot. Now bake for 9 to 11 mins.
Remove this from oven and cool it for 10 mins, now remove this to a cooling rack and cool completely. Enjoy with a cup of milk.
