Dry Ingredients
1)take plain flour in a bowl.

2)Add in cinnamon powder, ground cloves, ground ginger into the flour.

3)Add in baking soda and salt into the flour.

4)Mix this well using a whisk until it is evenly combined. Set aside, this is your dry ingredients.

Creaming Butter with Sugar
5)take soft butter in a bowl. This is unsalted butter.

6)I took granulated sugar in a blender and powdered it slightly. If you have caster sugar you can use that without powdering.

7)Cream both of this really well until well combined.

8)Add in egg. Make sure your egg is at room temperature.

9)Add in honey.

10)Cream this together till it is evenly mixed and looks fluffy.

Make Cookie Dough
11)Now add in the dry ingredients into the creamed butter and sugar mixture.

12)Mix well to form a cookie dough. The dough will be slightly sticky.

13)Wrap it with plastic wrap and place it in fridge for 30 minutes to 1 hour to firm up the cookie dough.

14)This is how the dough looks once it has rested for 1 hour in fridge. It would have firmed up a bit.

Shaping Cookies
15)Take your ice cream scoop. I used a 2 tablespoon measuring ice cream scoop. Scoop out some cookie dough.

16)Shape it into a round smooth ball.

17)Drop it into caster sugar or granulated sugar and coat the cookies with the sugar.

18)Place the sugar coated cookies dough on a plate.

19)Flatten the cookies slighly.

21)Now place the plate in fridge for 15 minutes to firm up a bit. Meanwhile Preheat oven to 190 degree C (374 degree F). Line a baking sheet with parchment paper and set aside.

Baking Cookies
22)Now arrange this in baking sheet, leaving space between them as they will spread a lot and bake for 9 to 11 mins.

- Dry Ingredients - Take flour, cinnamon, cloves, salt, baking soda and ginger in a bowl and mix well using a whisk until the spices are evenly mixed. Set aside.
- Creaming Butter with Sugar - Take butter, granulated sugar which is powdered in a bowl and beat with an electric beater till creamy. Add in egg and honey, whip again till creamy.
- Making cookie dough - Now add in the dry ingredients mix and mix well to form a sticky dough. Cover the bowl with plastic wrap and place in fridge to rest and chill for 30 mins to 1 hour.
- Scooping cookies - Use an ice cream scoop to scoop the dough and shape it into smooth ball, roll it out and place it in granulated sugar and roll it well. Place it in a plate and flatten it lightly. Now pop this in fridge and chill for another 15 mins to firm the cookies just a bit.
- Pre prep - Meanwhile Preheat oven to 190 degree C (374 degree F). Line a baking sheet with parchment paper and set aside.

The way this recipe is written can be very troublesome for an inexperienced baker. First of all, the recipe calls for baking soda, but baking powder is mentioned in the instructions. Second, the recipe calls for honey but this ingredient isn’t mentioned in the instructions. Moreover, the instructions say to preheat the oven in the first step, but the dough needs to be chilled for quite sometime (about 1.5 hours) before baking, so why keep the oven on that whole time?
To the inexperienced baker: it is baking soda, add the honey with the egg, and don’t preheat your oven until 15 mins before putting the cookies in.

I’m trying out you recipe today. A couple of things I noticed as I was mixing up the ingredients. In the list of ingredients you say baking soda. Then in the typed instructions you say baking powder. I had to research another recipe to see which might be correct. I went with baking “soda”. Also, in the typed instructions you do not state when to add the honey. Being an experienced baker, I figured it out. Perhaps you could correct these two items. It would be helpful for new bakers.

I followed your recipe with a little less sugar, the ratio of the spices i changed to make them more gingery, I added about 1/2 cup of chopped candied ginger, and then dipped them in sugar with more ginger mixed in.
