Chicken samosa are a crispy, flavourful snack that is loved across South Asia, especially during Ramadan. These golden triangle beauties are filled with spicy chicken mixture and wrapped in thin pastry sheets that are fried till golden brown. They are perfect for tea time snacks, parties or as a Ramadan treat to share with family and friends. Serve these chicken samosa hot with ketchup, mint chutney or with a cup of tea or coffee.
Take chicken breast in a pressure cooker. Add salt, water and cover the cooker. Pressure cook for 2 to 3 whistle. Let the steam escape by itself. Open the cooker and remove the chicken. Allow it to cool. Chop chicken into small pieces.
First make the filling. Heat oil in a pan, Add in onion, curry leaves, ginger garlic paste and green chillies. Saute for 2 mins. Add salt and spice powders and mix well.
Now add in all purpose flour and saute for a minute. Pour in chicken stock and cooked chicken and mix well. Set aside to cool.
Mix flour with water to make a paste. This is used to stick the samosa.
Take a samosa patti and spoon some filling in. Now fold like a samosa and seal the edges with flour and water paste. now the samosa is sealed.
Heat oil for deep frying. Drop samosa in hot oil, fry till golden brown. Strain the samosa using a slotted spoon. Serve.
