Chicken and Egg Scramble is a high protein breakfast, lunch or dinner recipe made using egg, cooked chicken, onions, tomatoes and chillies. This spicy protein rich recipe is low carb and makes a satisfying meal on itself. Learn how to make chicken egg scramble with step by step pictures and video.
Slice chicken breast into thin slices. Take chicken in a bowl, add in cornstarch, salt, pepper, baking soda and 1 tablespoon oil. Mix this really well and let it sit for 5 minutes. Now heat 1 teaspoon of oil in a pan, add chicken in the pan and cook for 3 minutes stiring often till cooked. Remove it to a bowl.
Heat oil in the pan, add garlic, chillies and onions. Saute for 2 minutes till translucent. Add in tomatoes and cook till mushy. Season with salt and pepper.
Add in egg whites and mix, add in the cooked chicken and mix through and scrambled. Add in coriander leaves and mix well. Serve.

Instead of using velveting technique and cooking chicken, you can use cooked shredded rotisserie chicken as well.
Spring onions can be used instead of white onions.
