Ingredients
  

For Cooking Chicken

  • 1 tablespoon Oil
  • 2 large Chicken Breast
  • 1 tablespoon Cornstarch
  • ½ teaspoon Baking Soda
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper Powder

For Making Scrambled Eggs

  • 2 teaspoon Oil
  • 4 cloves Garlic
  • 1 medium Onion chopped finely
  • 2 no Green Chillies chopped finely
  • 1 small Tomato chopped finely
  • 4 large Egg Whites
  • ½ teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 tablespoon Coriander leaves finely chopped

Instructions
 

  • Slice chicken breast into thin slices. Take chicken in a bowl, add in cornstarch, salt, pepper, baking soda and 1 tablespoon oil. Mix this really well and let it sit for 5 minutes. Now heat 1 teaspoon of oil in a pan, add chicken in the pan and cook for 3 minutes stiring often till cooked. Remove it to a bowl.
  • Heat oil in the pan, add garlic, chillies and onions. Saute for 2 minutes till translucent. Add in tomatoes and cook till mushy. Season with salt and pepper.
  • Add in egg whites and mix, add in the cooked chicken and mix through and scrambled. Add in coriander leaves and mix well. Serve.

Notes

  • Instead of using velveting technique and cooking chicken, you can use cooked shredded rotisserie chicken as well.
  • Spring onions can be used instead of white onions.
  • Vegetables like bell peppers, mushrooms, corn can be used in this scrambled egg which makes it so filling.
  • Use whole eggs for making this dish a wholesome meal.
