    About Chicken Egg Scramble

    Scrambled eggs are a dish made from eggs that have been stirred, whipped, or beaten together while being gently heated, usually with salt, butter, oil, and other ingredients. Scrambled eggs are a nutritious dish. Eggs are high in protein, B vitamins, and vitamin D, as well as heart-healthy unsaturated fats. When you add butter, cream, cream cheese, or shredded cheese, the calories, cholesterol, and fat
    content rise.

    Chicken Scrambled Eggs or Scrambled Eggs with chicken is a filling yet satisfying meal. It is great for people who are struggling to get their daily protein intake. Combination of chicken and egg whites makes this dish high in protein. 

    For making this dish, I used egg whites instead of whole eggs and chicken breast which increase the protein content. I sliced chicken breast thinly and used a technique called as velveting to marinate the chicken and cooked it in a pan separately till done. 

    Velveting is a Chinese method for cooking protein so it stays soft and moist. Since chicken breast is low in fat, it tends to dry out faster. Because of the velveting technique the meat stays soft and juicy. I use onions, tomatoes and green chillies in the recipe which adds a spicy unique taste to the scramble eggs. 

    For faster dinner, Try adding leftover chicken into your scrambled eggs to make it super delicious and protein rich. Perfect breakfast option for all those fitness enthusiast to increase your protein intake.

    Chicken Egg Scramble Ingredients

    Chicken -  I sliced chicken breast thinly and used a technique called as velveting to marinate the chicken and cooked it in a pan separately till done. Velveting is a Chinese method for cooking protein so it stays soft and moist. Since chicken breast is low in fat, it tends to dry out faster. Because of the velveting technique the meat stays soft and juicy. For velveting we will be using cornstarch, oil, baking soda, some salt & pepper. 

    Eggs - You can use whole eggs including yolk and whites for making this scrambled eggs. I used egg whites alone which makes this low in calorie. 

    Onion - Onions are considered a basic ingredient or the foundation of Indian cooking and are used to make any gravy, curry, or bhuna dish. The flavour and aroma of onion transforms any ordinary dish into a mouthwatering and delectable one. you can use whole onions, or shallots for making the scrambled eggs. I chop them finely and added into the dish. In fact you can use chopped green onions too.

    Tomatoes - this is optional, but I prefer the taste of tomatoes in my scrambled eggs.

    Green chillies - finely chopped chillies enhance the taste and adds a spicy kick to the dish.  To reduce the fiery hot flavor the seeds and inner membranes could be removed which is effective at reducing the heat of the pod.

    High Protein Scrambled Eggs (3 Easy Steps)

    Cooking Chicken - Slice chicken breast into thin slices. Take chicken in a bowl, add in cornstarch, salt, pepper, baking soda and 1 tbsp oil. Mix this really well and let it sit for 5 minutes. Now heat 1 tsp of oil in a pan, add chicken in the pan and cook for 3 minutes stiring often till cooked. Remove it to a bowl.

    Making Base - Heat oil in the pan, add garlic, chillies and onions. Saute for 2 minutes till translucent. Add in tomatoes and cook till mushy. Season with salt and pepper.

    Making Scrambled Eggs - Add in egg whites and mix, add in the cooked chicken and mix through and scrambled. Add in coriander leaves and mix well. Serve.

    How to Make Chicken Egg Scramble (Stepwise Pictures)

    Velveting Chicken

    1)Take boneless chicken breast, slice it thinly. Take it in a bowl.

    2)Season chicken with salt and pepper. You can season chicken with soy sauce, red chilli flakes or any spices that you prefer. Add in cornstarch into the chicken.

    3)Add in baking soda | cooking soda.

    4)Add in oil into the chicken.

    5)Mix the chicken really well. Once chicken is coated with all the ingredients, set aside for 5 minutes. This process is called as velveting the chicken, it helps the chicken breast stay moist and soft once cooked.

    Cooking Chicken Breast

    6)Heat oil in a pan. Let the pan heat through.

    7)Add the chicken into the pan and cook for 2 to 3 minutes while stiring often. This helps the chicken gets cooked fast.

    8)You can take a piece of chicken and use your hands to tear it. if it looks cooked then remove it to a plate.

    Making Base for Scrambled Eggs

    9)Heat some oil in a pan.

    10)Add in chopped garlic into the pan. Stir fry the garlic for 30 seconds.

    11)Add in chopped green chillies into the oil.

    12)Add in finely chopped onions and stir fry.

    13)Cook the onions till 2 minutes.

    14)Add in tomatoes.

    15)Cook the tomatoes till it gets mushy.

    16)Season the onions with salt and pepper to taste.

    Scrambling Eggs

    17)Now add in the egg whites into the onion tomato mix.

    18)Scramble it slightly.

    19)Add in the cooked chicken and mix through.

    20)Chicken Scrambled Eggs is ready to serve.

    Expert Tips

    • Instead of using velveting technique and cooking chicken, you can use cooked shredded rotisserie chicken as well.
    • Spring onions can be used instead of white onions.
    • Vegetables like bell peppers, mushrooms, corn can be used in this scrambled egg which makes it so filling.
    • Use whole eggs for making this dish a wholesome meal.

    Ingredients

    For Cooking Chicken

    • 1 tbsp Oil
    • 2 large Chicken Breast
    • 1 tbsp Cornstarch
    • ½ tsp Baking Soda
    • 1 tsp Salt
    • ½ tsp Black Pepper Powder

    For Making Scrambled Eggs

    • 2 tsp Oil
    • 4 cloves Garlic
    • 1 medium Onion chopped finely
    • 2 no Green Chillies chopped finely
    • 1 small Tomato chopped finely
    • 4 large Egg Whites
    • ½ tsp Salt
    • ½ tsp Black Pepper
    • 2 tbsp Coriander leaves finely chopped

    Instructions
