Ingredients

Noodles - 1 packet cooked as per package directions
▢
Eggs - 2 to 3 as needed
▢
Oil - 2 tblsp
▢
Garlic - 5 cloves chopped finely
▢
Onion - 1 sliced thinly
▢
Capsicum / Bell Pepper - ½ sliced thinly
▢
Mushrooms - 6 to 8 sliced thinly
▢
Green Chillies - 2 chopped
▢
Soy Sauce - 2 tsp
▢
Vinegar - 1 tsp
▢
Water as needed
▢
Black Pepper - 1 tsp
▢
Salt to taste

Sugar - ½ tsp
▢
Cornflour - 1 tblsp
Instructions
▢
Cook noodles as per package directions and set aside
▢
Heat oil in a pan, fry some eggs till golden, drain and set aside.
▢
In the same oil, add garlic and onions. Cook till golden.
▢
Add in mushrooms, green chillies and peppers and saute for 2 to 3 mins.
▢
Now add in soy sauce, salt, sugar, vinegar and pepper and mix well.
▢
Now add in water and bring it to a boil.
▢
Add in cornflour slurry and mix well.
▢
Cook till it thickens.
▢
Now heat little oil in a frying pan, place noodles and cook till it gets crispy, flip over and cook till golden.
▢
Remove to a plate. Spoon over sauce and top with eggs.
▢
Serve
