Cucumber Pachadi Recipe | Kerala style Vellarikka Pachadi recipe

Amma's Cucumber Pachadi Recipe with step by step pictures. This is a very common dish made with coconut and yogurt. This little sweet and sour curry will make a delicious accompaniment with rice.

Ingredients
  

  • 1 cup Cucumber chopped into small pieces
  • Salt to taste
  • ¾ cup Water
  • 2 tablespoon Yogurt
  • For Grinding:
  • ¼ cup Coconut
  • 1 Green Chilli
  • ½ teaspoon Cumin Seeds
  • For Tempering:
  • 1 teaspoon Oil
  • ½ teaspoon Mustard Seeds
  • 5 Curry leaves

Instructions
 

  • Take grinding ingredients in a blender, add some water and make into a smooth paste. Set this aside till use.
  • Now take cucumber in a kadai. Season this with salt.
  • Cover with water and bring that to a boil. Simmer and cover the pot and cook till the cucumber is cooked.
  • Now add in the ground masala and mix well. Bring that to a boil.
  • Once it boils. switch off the flame. Now let it cool for 5 mins.
  • Add curd and mix well.
  • Now make tempering, by heating oil and crackling in mustard and curry leaves.
  • Add this tempering over the pachadi and mix well.
  • Serve with rice.
