Prepare a loaf pan by greasing it with oil and dusting it with flour. Refer this post for detail pics.
Take water in a sauce pan and bring it to a boil. Now pour ¼ cup of water over flax seed meal and mix well. Set aside.
Now pour the remaining 1 cup of water over chopped dates, add in some baking soda and mix well. Set aside till it gets cold.
Now preheat the oven to 180 Degree C. If using pressure cooker for baking this, refer this post.
Now take oil, sugar and vanilla in a bowl and mix well.
Add the flaxseed mix and beat well.
Add in half the flour mix and fold gently. Add in the dates mix and the remaining flour mix. Fold gently.
Now fold in the chopped almonds and mix gently.
Pour this into a prepared loaf pan and bake it in a pressure cooker for 1 hour. If you are baking it in oven bake it for 50 mins to 1 hour.
Check by inserting a tooth pick and see. If the tooth pick comes out clean then it is done.
Remove it and let it cool for 15 mins in the pan. Invert it and allow it to cool completely. Slice and serve.
