    Date-Nut Bread Recipe

    Ever since i saw this recipe, i was just hooked to it. I wanted to make it for sure..Because i love bread which has nuts and dates in them. Finally i decided a day to make this cake and i got all the ingredients on hand. I made the batter and when i poured it into the loaf pan, the power got cut. What will i do, thank god for the pressure cooker. I used that to bake this cake and it turned out perfect.

    This bread was so moist, plus the sweetness from the dates was so good and the crunchyness from the almonds was lovely. Totally this bread is so healthy and taste great with a cup of coffee or chai.

    Ingredients for Date-Nut Bread Recipe

    • All Purpose Flour / Maida - 2 cup / 240 grams
    • Salt - ¼ tsp
    • Baking Soda - 1 tsp
    • Oil - ¼ cup / 60 ml
    • Sugar - ½ cup / 100 grams
    • Vanilla Essence - 1 tsp
    • Dates - 1 cup chopped into small pieces
    • Almonds / Badam - ½ cup (use any nuts) chopped
    • Flax Seed Meal or Powder - 1 tbsp
    • Water - 1 ¼ cup / 300 ml

    How to make Eggless Date Nut Bread Recipe

    1. Prepare a loaf pan by greasing it with oil and dusting it with flour. Refer this post for detail pics.
    2. Take water in a sauce pan and bring it to a boil. Now pour ¼ cup of water over flax seed meal and mix well. Set aside.
    3. Now pour the remaining 1 cup of water over chopped dates, add in some baking soda and mix well. Set aside till it gets cold.
    4. Now preheat the oven to 180 Degree C. If using pressure cooker for baking this, refer this post.
    5. Now take oil, sugar and vanilla in a bowl and mix well. 
    6. Add the flaxseed mix and beat well.
    7. Add in half the flour mix and fold gently. Add in the dates mix and the remaining flour mix. Fold gently.
    8. Now fold in the chopped almonds and mix gently.
    9. Pour this into a prepared loaf pan and bake it in a pressure cooker for 1 hour. If you are baking it in oven bake it for 50 mins to 1 hour.
    10. Check by inserting a tooth pick and see. If the tooth pick comes out clean then it is done.
    11. Remove it and let it cool for 15 mins in the pan. Invert it and allow it to cool completely. Slice and serve.

    Ingredients

    • 2 cup All Purpose Flour (240 grams)
    • ¼ tsp Salt
    • 1 tsp Baking Soda
    • ¼ cup Oil 60 ml
    • ½ cup Sugar 100 grams
    • 1 tsp Vanilla Essence
    • 1 cup Dates chopped into small pieces
    • ½ cup use any nuts chopped Almonds / Badam
    • 1 tbsp Flax Seed Meal
    • 1 ¼ cup Water 300 ml

    Instructions

    • Prepare a loaf pan by greasing it with oil and dusting it with flour. Refer this post for detail pics.

    • Now fold in the chopped almonds and mix gently.
    • Pour this into a prepared loaf pan and bake it in a pressure cooker for 1 hour. If you are baking it in oven bake it for 50 mins to 1 hour.
    • Check by inserting a tooth pick and see. If the tooth pick comes out clean then it is done.
    • Remove it and let it cool for 15 mins in the pan. Invert it and allow it to cool completely. Slice and serve.

    Date-Nut Bread Recipe step by step pictures

     
    Take all your ingredients 
    Start by heating the water
    remove it from fire
    take flax seed powder in a small bowl
    Pour some water over it and set aside
    now take chopped dates in a bowl
    pour boiling water over the dates
    sprinkle over some baking soda
    mix well and set aside till it is cold
    it will be foamy like this
    now take all purpose flour / maida in a bowl
    sprinkle some salt over it
    mix well and set aside
    Take oil, sugar and vanilla in a bowl and mix well
    Add in the flax seed mix 
    now mix this whole thing really well
    This is my first recipe using flax seed meal, i found
    that it gave a egg added texture,
    thats why it makes a perfect egg substitute
    Now add in half of the flour mix
    mix lightly
    i added the entire dates mix
    Fold it gently

     

    add in the remaining flour mix
    fold well..the batter will be little on the thicker side

     

    add in chopped almonds..you can add any nuts
    as your choice
    fold well
     
     
    i prepared a loaf pan, check this post for how to
    prepare a pan for baking
    transfer the mix into the loaf pan
    i baked it in a pressure cooker

    now it is all cooked..let it cool a bit before unmoulding
    serve
    serve a generous slice with a cup of chai..

      Hi ! Tried the bread.. turned out wel.. except thathe it was little harder on the sides and bottom.. where would I been wrong ? Yet.. It tasted delicious ... awesome aroma .. Thanks a ton.. 🙂

      @Anonymousthis bread is meant to have a crust on top and sides. If you make the batter little thinner, it wont happen

      Have tried this cake twice and it came out perfect both the times! However i felt if butter was added in place of oil it could be even more softer and moist.Can we use butter instead of oil aarthi? Will that affect the texture?

      1.Do we need to add water in the cooker
      2.Should we use gasket?
      3.should we use whistle
      4.Should baking be done in sim flame?

      Hi Aarthi...can i use a silicon mould in a pressure cooker.. Apologies for the question.. But it's my first time baking n m really scared.. So much so hv never baked in a microwave ever before... Please help
