First cook the rice, you can cook as per package directions. You can either use white shortgrain rice or regular rice as well. Cook it and set aside. For 1 cup of rice use 1.5 cups of water and take it in a pot, bring it to a boil and simmer the pot. Cook covered on a low heat for 10 to 15 mins. Fluff the rice with a fork and set aside.
Now prepare your veggies. Set aside.
Boil some water in a sauce pan, add spinach in it and boil for couple of mins. Drain it and wash in cold water. Squeeze the excess water and chop roughly. Take it in a bowl, add spring onion, garlic, soy sauce and sesame oil. Toss well. Set aside.
Now heat little vegetable oil in a pan, start by sauteing the light colour veggies so the veggies dont stain. Start with mushrooms, yellow zucchini, green zucchini and then carrots. If you are using bean sprouts, boil it in water and season just like you did for spinach. Now set the veggies aside.
Now heat little oil in a pan and make fried egg, sunny side egg. Set aside.
Now take your serving pot, drizzle little sesame oil in the bowl, spoon the rice, top with the veggies and place the whole bowl on heat and let it heat till your hear sizzling sound. It will take around 5 mins.
