Drumstick leaves onion poriyal is a traditional South Indian stir-fry recipe made using fresh drumstick leaves ( murungai keerai ), onion and spices. The onion adds a subtle sweetness, while the drumstick leaves give the dish a unique texture and flavour. Drumstick leave poriyal is a healthy and tasty way to include greens in your daily meal. It is a perfect side dish for hot rice with sambar or rasam. It is a quick, simple and wholesome dish that adds both the taste and nutrition to your meal.
Heat oil in a pan, add mustard and cumin seeds and let it sizzle. Add in dry red chillies and curry leaves and mix well.
Add in onions and saute for a min. Add in drumstick leaves and stir for 3 to 5 mins. Add little water and cook till done. Add in salt, jaggery and mix well.
Add coconut and mix well. Stir fry for 2 mins. Serve with rice.
