Egg omelette sandwich is a classic Indian street style dish that is also served in railway platform snacks and train journey foods. This simple sandwich is made with fluffy eggs, onion, green chillies, tomato, capsicum and bread.
Mix all the ingredients for omelette in a bowl except oil in a mixing bowl. Heat oil in a small pan. Pour ¼ of the egg mixture in the pan, cook for few minutes until set. Now flip over and cook on other side too. Remove it to a plate and make 3 more omelette.
Now take two bread slice. Spread with green chutney on one side, ketchup on other side. Place one egg omelette, cheese slice and cover with other slice of bread.
Apply butter on both sides of the bread. Place it on a grill pan or sandwich maker and cook till golden brown. If you don't have a sandwich maker, you can cook on a regular pan. Slice into diagnals and serve.
