Looking for an easy breakfast option which is nutritious and easy to make, This breakfast egg quesadilla is the answer. Loaded with eggs and cheese makes this super delicious and fast to make. Add in some cooked beans and vegetables to make it extra healthy and filling.
Take eggs, salt, pepper, chopped green onions in a bowl and whisk it to combine. Set aside.
Heat a skillet on medium high heat. Warm up the tortilla on both sides for few seconds. Remove and set aside.
In the same skillet, heat 1 tablespoon of oil. once the oil is hot, pour the egg mixture and scramble them slightly until done. Remove to a bowl and set aside.
Now take the tortilla. Spread half of the scrambled egg on one side of the tortilla. Sprinkle with ¼ cup of cheese over the eggs, add a teaspoon of hot sauce (optional). Fold the tortilla so it looks like half moon.
Heat skillet on medium high heat. Add in 1 tablespoon of oil and spread evenly. Now place the tortilla on the oil and cook for 1 minute on medium heat till the bottom gets crispy. Flip over and cook on other side too. Once both side is golden and crispy. Remove to a cutting board. Cut it into three pieces.
Enjoy hot with guacamole, hot sauce or sour cream.
