Ingredients
  

  • 2 no Flour Tortilla
  • ½ cup Mozzarella Cheese
  • 2 teaspoon Hot Sauce optional
  • 1 tablespoon Olive Oil

For Scrambled Eggs

  • 1 tablespoon Olive Oil
  • 3 large Eggs
  • 1 no Green Onions or Chives chopped finely
  • ½ teaspoon Salt or to taste
  • ½ teaspoon Black Pepper Powder or to taste

Instructions
 

  • Take eggs, salt, pepper, chopped green onions in a bowl and whisk it to combine. Set aside.
  • Heat a skillet on medium high heat. Warm up the tortilla on both sides for few seconds. Remove and set aside.
  • In the same skillet, heat 1 tablespoon of oil. once the oil is hot, pour the egg mixture and scramble them slightly until done. Remove to a bowl and set aside.
  • Now take the tortilla. Spread half of the scrambled egg on one side of the tortilla. Sprinkle with ¼ cup of cheese over the eggs, add a teaspoon of hot sauce (optional). Fold the tortilla so it looks like half moon.
  • Heat skillet on medium high heat. Add in 1 tablespoon of oil and spread evenly. Now place the tortilla on the oil and cook for 1 minute on medium heat till the bottom gets crispy. Flip over and cook on other side too. Once both side is golden and crispy. Remove to a cutting board. Cut it into three pieces.
  • Enjoy hot with guacamole, hot sauce or sour cream.
