    Breakfast Egg Quesadilla Recipe

    Looking for an easy breakfast option which is nutritious and easy to make, This breakfast egg quesadilla is the answer. Loaded with eggs and cheese makes this super delicious and fast to make. Add in some cooked beans and vegetables to make it extra healthy and filling.

    I made this simple breakfast quesadilla with eggs and cheese and it came out so good. How couldn't it not be good, anything with eggs and cheese is wonderful right.

    A simple scrambled egg is stuffed inside tortilla with a sprinkle of cheese and hot sauce. Grilling the tortilla till it get golden and crispy which makes the outer layer turn into a crispy shell.

    About Egg Quesadilla Recipe

    Egg quesadilla is also known as breakfast quesadilla is a popular Mexican breakfast dish. Mornings can be super busy, this dish comes handy. The filling is made with eggs and cheese which makes it super nutritious. 

    This  tortilla is filled with cheese which is then cooked on a griddle or stove. Other fillings such as meats, spices, beans and other ingredients may also be used. Traditionally flour tortilla is used, but corn tortilla can be swapped too. 

    I made a simple scrambled egg which I filled into the tortilla. You can add beans, veggies like corn, peppers, onions can be used too. Enjoy this quesadilla hot with guacamole or salsa.

    Somedays, I add cooked chicken, beans and veggies in the filling. Salsa, refried beans makes a wonderful filling.

    Variations & Flavor Ideas

    Here are some of the filling ideas which I have tried in the past. These are some of my family favorite filling. Cheese + sauted onions & bell peppers, Cheese + mushrooms (add garlic for extra flavour).

    For Indian taste, use Paneer bhurji + cheese, Chicken tikka + cheese, Minced chicken (keema). These add Indian flavour to your quesadilla making it more flavourful.

    BBQ chicken + caramelised onions + cheese makes a great filling. This is great when you have leftover bbq chicken from last night.

    Ingredients

    • Tortilla - I used Flour tortillas which I have on hand always. You can use corn tortilla too.
    • Eggs  - high in protein which makes it best choice for filling.
    • Cheese - I used mozzarella cheese, you can use cheddar or any variety you prefer. 
    • Seasonings - salt and pepper is added to flavour the eggs. You can go creative and use any seasonings and herbs. 
    • Green Onions - finely chop green onions or spring onions which is added into eggs makes it super flavourful.
    • Oil - I used oil to cook the scrambled eggs and grilling the tortilla. You can use butter too. 

    Step by Step Pictures

    Pre-preparation

    1)Crack open three eggs in a mixing bowl.

    2)Add in salt, pepper, chopped green onions in the bowl.

    3)whisk it to combine. Set aside.

    4)Heat a skillet on medium high heat. Warm up the tortilla on both sides for few seconds. Remove and set aside.

    Scrambling Eggs

    5)In the same skillet, heat 1 tablespoon of oil. once the oil is hot, pour the egg mixture.

    6)scramble them slightly until done. Remove to a bowl and set aside.

    Assembling Quesadilla

    7)Now take the tortilla. Spread half of the scrambled egg on one side of the tortilla.

    8)Sprinkle with ¼ cup of cheese over the eggs, add a teaspoon of hot sauce (optional).

    9)Fold the tortilla so it looks like half moon.

    Cooking Quesadilla

    10)Heat skillet on medium high heat. Add in 1 tablespoon of oil and spread evenly. Now place the tortilla on the oil and cook for 1 minute on medium heat till the bottom gets crispy.

    11)Flip over and cook on other side too. Once both side is golden and crispy.

    12)Remove to a cutting board. Cut it into three pieces.

    13)Enjoy hot with guacamole, hot sauce or sour cream.


    Expert Tips

    • You can add vegetables like corn, mushrooms, peppers, onion or tomatoes along with eggs.
    • If you prefer for more filling meal, add in cooked beans like black beans or pinto beans.
    • Flavour the filling with your favourite seasonings or herbs.
    • Once the quesadilla is grilled, open it up and add some chopped avocado to make it more creamy and tasty.
    • Topping cooked quesadilla with sour cream, salsa and extra guacamole makes it more appealing.

    Serving & Storage

    Quesadilla is best served piping hot right after it is made. Enjoy with sour cream, salsa and extra guacamole.

    Is quesadilla Mexican or American?

    Quesadillas, is a Mexican food in which some kind of filling and cheese is stuffed inside tortilla and grilled. 

    Can I use corn tortilla in this recipe?

    Yes, absolutely. You can use corn tortilla for making quesadilla to make it more filling and satisfying.

    Can I add any other ingredients in the filling?

    Veggies like onions, tomatoes, peppers, corn can be used. Cooked chicken can be used. You can add cooked pinto beans or black beans to make it more substantial. 

    Which cheese is best for quesadillas?

    I use mozzarella cheese which gives best cheese pull. You can use cheddar cheese as well.

    Ingredients
      

    • 2 no Flour Tortilla
    • ½ cup Mozzarella Cheese
    • 2 teaspoon Hot Sauce optional
    • 1 tablespoon Olive Oil

    For Scrambled Eggs

    • 1 tablespoon Olive Oil
    • 3 large Eggs
    • 1 no Green Onions or Chives chopped finely
    • ½ teaspoon Salt or to taste
    • ½ teaspoon Black Pepper Powder or to taste

    Instructions
     

    • Take eggs, salt, pepper, chopped green onions in a bowl and whisk it to combine. Set aside.

      looks delivious, reminds me of the egg naan served during ramadaan at various places in mumbai...never ate them there but I can imagine the great taste it has...you have given a better option as always
