Ingredients

Onion - 1 chopped

Tomato - 1 chopped

Eggs - 3
▢
Green Chilli - 2
▢
Salt to taste

Turmeric powder / Manjal podi - ½ tsp
▢
For Frying and grinding:
▢
Onion - 1 sliced
▢
Tomatoes - 1 chopped
▢
Coconut - ½ cup
▢
Fennel Seeds / Sombu / Saunf - 1 tblspn
▢
Whole Pepper- 1 tsp
▢
Cinnamon / pattai - 1 inch stick
▢
Curry leaves - 1 spring
▢
Chilli powder - 1 tsp
▢
Coriander powder / Malli podi - 1 tblspn
▢
Turmeric powder / Manjal podi - ½ tsp
▢
Oil - 3 tblspn
Instructions
▢
Let's make the masala. Heat Oil in a kadai. Add fennel, pepper and cinnamon. Saute for a min.
▢
Add in onions, curry leaves and cook for 3 mins. Throw in chilli powder and coriander powder . Mix well.
▢
Add in tomatoes and cook till they turn mushy. Add in coconut and saute for 5 mins till they turn golden.
▢
Remove them and make into a fine puree and set aside.
▢
Now add onions, tomatoes and green chilli in a pan. Add water and salt and sugar and cover and cook till they are cooked.
▢
Add in the ground masala and mix well. Cook till oil separates.
▢
Add in the well beaten egg slowly and mix well. Cover and cook for 5 mins.
▢
Serve with roti, dosa or parotta.
