Ingredients
  

  • Eggplant - 1 sliced into thick slices
  • All Purpose Flour / Maida - ½ cup
  • Breadcrumbs - 2 cup
  • Oregano - 1 tsp
  • Basil - 1 tsp
  • Salt to taste
  • Black Pepper - 1 tsp
  • Garlic Powder - 1 tsp
  • Oil for shallow frying
  • Pasta Sauce as needed Recipe here
  • Mozzarella Cheese - 2 cups shredded

Instructions
 

  • Preheat oven to 180 degree C.
  • Mix flour with water to a batter.
  • Mix breadcrumbs with seasoning, salt and pepper and mix well.
  • Dip eggplant in the flour batter and coat with breadcrumbs.
  • Shallow fry till crispy.
  • Take a baking dish. Spoon some sauce in the bottom.
  • Place eggplant slices. Top with more sauce and cheese.
  • Again place a eggplant layer. Spoon some sauce and top with cheese.
  • Bake for 15 to 20 mins.
