- Whole Wheat Focaccia Bread as needed check this link
- 1 tablespoon Olive Oil
- 1 large Onion sliced thinly
- 3 cloves Garlic chopped finely
- 1 Bell Pepper sliced thinly
- ½ Zuchinni sliced into thin slices
- Lettuce as needed
- 1 teaspoon Oregano
- 1 Green Chilli Pepper chopped finely
- Salt to taste
- 1 teaspoon or to taste Lemon Juice
- For Garlic Mayo Spread:
- ¼ cup Mayonnaise
- 1 cloves Garlic chopped finely
Heat oil in a pan, add in onions and saute till it is lightly wilted.
Now add in peppers and veggies and toss well.Cook till it is well caramelized.
Now add in garlic, oregano and salt and mix well. Add in lemon juice and mix well.
Mix mayo and garlic for the sauce. Set aside.
Take your focaccia, and slit them in middle. You can toast them if you want too.
Now spread the mayo on both sides and top with the veggies. PLace the other half on top and press down.
Now you can enjoy it immediately or wrap it in plastic wrap or foil for putting in lunch box.
