Veggie Focaccia Sandwich Recipe – Focaccia Sandwiches Recipe

After i made my whole wheat focaccia, i wanted to create a sandwich using that. You all know that i love sandwiches so much, you can see my ever growing collections of sandwiches.

I decided to create a veggie sandwich. Luckily i had all the veggies on hand and it turned out pretty good.. I enjoyed it for my lunch..

Hope you will give this a try and let me know how it turns out for you..

Preparation Time : 10 mins
Cooking Time : 15 mins
Serves:2

Ingredients:

Whole Wheat Focaccia Bread as needed (check this link)
Olive Oil – 1 tblspn
Onion – 1 large sliced thinly
Garlic – 3 cloves chopped finely
Bell Pepper – 1 sliced thinly
Zuchinni – 1/2 sliced into thin slices
Lettuce as needed
Oregano – 1 tsp
Green Chilli Pepper – 1 chopped finely
Salt to taste
Lemon Juice – 1 tsp or to taste

For Garlic Mayo Spread:
Mayonnaise – 1/4 cup (check this post)
Garlic – 1 cloves chopped finely

Method:

Heat oil in a pan, add in onions and saute till it is lightly wilted.

Now add in peppers and veggies and toss well.Cook till it is well caramelized.

Now add in garlic, oregano and salt and mix well. Add in lemon juice and mix well.

Mix mayo and garlic for the sauce. Set aside.

Take your focaccia, and slit them in middle. You can toast them if you want too.

Now spread the mayo on both sides and top with the veggies. PLace the other half on top and press down.

Now you can enjoy it immediately or wrap it in plastic wrap or foil for putting in lunch box.

Take all your ingredients
slice them like this
take your other stuffs as well
heat little olive oil and saute you onions
add in bell peppers
add in zuchinni
add in green chilles
mix well
cook them till it is well caramelized
just like this
add in garlic
salt
oregano and cook for 2 more mins
now add in lemon juice
mix well..filling done
take mayo in a bowl
add in garlic
mix well
slit open your focaccia..you can toast them if you want to
spread with mayo
place some lettuce leaves
now arrange your veggies
cover with other slice
Serve

    I made the veggie filling last evening for my husband. I put the filling in a pita pocket and it was yummy. I had to make more filling for the kids and it came out so good. Thanks so much. I follow your receipes everyday and try out most of them to the T.
