Veggie Focaccia Sandwich
After i made my whole wheat focaccia, i wanted to create a sandwich using that. You all know that i love sandwiches so much, you can see my ever growing collections of sandwiches.
I decided to create a veggie sandwich. Luckily i had all the veggies on hand and it turned out pretty good. I enjoyed it for my lunch.

Ingredients for Veggie Focaccia Sandwich
- Whole Wheat Focaccia Bread as needed (check this link)
- Olive Oil - 1 tbsp
- Onion - 1 large sliced thinly
- Garlic - 3 cloves chopped finely
- Bell Pepper - 1 sliced thinly
- Zuchinni - ½ sliced into thin slices
- Lettuce as needed
- Oregano - 1 tsp
- Green Chilli Pepper - 1 chopped finely
- Salt to taste
- Lemon Juice - 1 tsp or to taste
For Garlic Mayo Spread:
- Mayonnaise - ¼ cup (check this post)
- Garlic - 1 cloves chopped finely
How to make Veggie Focaccia Sandwich
- Heat oil in a pan, add in onions and saute till it is lightly wilted.
- Now add in peppers and veggies and toss well.Cook till it is well caramelized.
- Now add in garlic, oregano and salt and mix well. Add in lemon juice and mix well.
- Mix mayo and garlic for the sauce. Set aside.
- Take your focaccia, and slit them in middle. You can toast them if you want too.
- Now spread the mayo on both sides and top with the veggies. PLace the other half on top and press down.
- Now you can enjoy it immediately or wrap it in plastic wrap or foil for putting in lunch box.

- 3 cloves Garlic chopped finely
- 1 Bell Pepper sliced thinly
- ½ Zuchinni sliced into thin slices
- Lettuce as needed
