Egg - 1
Sugar - ⅓ cup
Sultanas / Raisins - 4 tblsp
Rum - 3 tblsp
Vanilla Extract - ½ tsp
Oil - ¼ cup
Almond Flour - 1 cup
Carrot - ½ cup grated
Lemon Zest - from one lemon
Lemon Juice - ½ tsp
Instructions
Preheat oven to 180 degree C. Grease a nonstick muffin pan.
Take raisins and rum in a sauce pan and bring it to a simmer. Set aside to cool.
Mix egg, sugar, vanilla and oil till foamy and frothy.
Add in remaining ingredients and mix well.
Spoon it into the muffin mould and bake for 25 to 35 mins or untill golden.
Remove and cool completely.
Unmould and serve.
