Gluten Free Venetian Carrot Cake Recipe
Ingredients
- Egg - 1
- Sugar - ⅓ cup
- Sultanas / Raisins - 4 tblsp
- Rum - 3 tblsp
- Vanilla Extract - ½ tsp
- Oil - ¼ cup
- Almond Flour - 1 cup
- Carrot - ½ cup grated
- Lemon Zest - from one lemon
- Lemon Juice - ½ tsp
Instructions
- Preheat oven to 180 degree C. Grease a nonstick muffin pan.
- Take raisins and rum in a sauce pan and bring it to a simmer. Set aside to cool.
- Mix egg, sugar, vanilla and oil till foamy and frothy.
- Add in remaining ingredients and mix well.
- Spoon it into the muffin mould and bake for 25 to 35 mins or untill golden.
- Remove and cool completely.
- Unmould and serve.
