Start by preheating oven to 200 degree C (400 degree F).
Wash and pat dry chicken legs. Slit the chicken legs using a sharp knife. Set aside.
Take the baking dish in which you are going to bake the chicken. I used a glass baking tray. Add all the marination ingredients in the baking dish. Mix it really well until it forms into a paste. Taste this marination and adjust seasonings.
Place the chicken over the marination and mix really well so the whole chicken is coated with the marination. You can cook this immediately or leave to marinate overnight.
Now place the baking dish into the preheated oven in the middle rack. Bake the chicken for 1 hour and 15 minutes. Half way through the cooking process, open the oven and base the chicken with the cooking liquid.
Once baked, remove the baking dish from oven and allow it to cool for 10 minutes. Serve hot.
Notes
I used grill seasoning which I had. if you don't have grill seasoning, you can use any seasonings you like. Cajun seasoning, poultry seasoning or any mixed seasoning that you have.
