Ingredients

For Making Phyllo Pastry

  • 2 cups All Purpose Flour (Plain Flour)
  • 1 teaspoon Salt
  • 2 teaspoon Vinegar
  • 1 tablespoon Extra Virgin Olive Oil
  • ¾ cup Warm Water
  • 1 cup Cornstarch

To Make Baklava

For Filling

  • 200 grams Pistachios (You can use a mix of cashews, almonds, walnuts)
  • 3 tablespoon Granulated Sugar

For Syrup

  • cup Sugar
  • ¾ cup Water
  • 1 tablespoon Lemon juice
  • ½ teaspoon Rose Water or Orange Blossom Water

Homemade Phyllo Pastry

  • Take flour, salt, oil, vinegar in a bowl. Mix well. pour in warm water and knead it to a firm dough. Cover the dough with plastic wrap and let it rest for 30 mins to 1 hour.
  • Divide it into 30 equal balls. dust with some cornstarch and set aside covered.
  • Take five balls and roll it gently. I rolled it till it is in the size of my palm. Once the five balls are rolled. Dust it with cornstarch generously and stack over each other.
  • Roll it gently without giving much pressure. Once it is rolled a bit, i like to peel each layer carefully and gently dust some more cornstarch over the sheets. Stack them again and roll even more till thin.
  • Once the sheets are rolled almost the size of the pan which you are going to bake. Gently peel each layers separately.
  • Place it in a plate which is dusted heavily with cornstarch. Cover the sheets with damp cloth and set aside. Repeat this for the remaining dough.
  • Now use this for making baklava or spring rolls or anything.

Making Baklava

  • Preheat oven to 190 degree C (374 degree F).Take a 20 cm square baking pan and brush it generously with ghee and set aside.
  • Take pistachios, sugar in a blender or food processor. Crush them coarse and set aside. This is your filling. You can use combination of any nuts in this.
  • Spread phyllo sheets in the pan, you need to spread 6 to 10 layers of phyllo sheets. spread ghee between each layer. Now spread ½ of the pistachio mix over the phyllo pastry.
  • Now spread another 10 layers of phyllo pastry. Make sure you grease each layer with ghee. Now spoon the remaining half of the pistachio mix and top with another 10 layer of phyllo pastry. Make sure you grease each layer with ghee.
  • Now use a sharp knife to cut it into small diaganols. Bake this in preheated oven for 1 hour.
  • While the baklava is baking. Let's make the syrup. Take sugar, water, lemon juice in a sauce pan. Boil this for 8 to 10 mins till syrupy.
  • Remove the baklava from oven. pour the syrup all over it. Top with crushed pistachios. Set aside cool down completely.
  • Carefully remove the baklava from pan and set aside.
