This layered banana chocolate cake is one of those simple cakes that looks really special when sliced. It is a two flavour cake made with ripe bananas, cocoa powder, butter and chocolate. A chocolate layer and banana layer gives you a soft, moist cake with a delicious combination of banana and chocolate in every bite.
Preheat oven to 170 degree C (350 degree F). Line a standard 9x5 loaf pan with parchment paper, grease with oil and set aside.
Now lets melt the chocolate for the chocolate flavour cake. Take chocolate in a bowl and melt it gently either in microwave for 10 to 20 seconds or in a double boiler. Make sure the chocolate is completely melted. Once it is smooth, add cocoa powder and mix well. Set this aside.
Mix Dry Ingredients. Take flour, baking soda and salt in a bowl and mix well using a whisk. You can sieve this mixture too.
Take butter, sugar and vanilla in a bowl and use an electric beater or a spatula to and cream this together until light and fluffy.
Add in eggs and cream again until combined. Don't over mix the batter. Now Add banana puree, yogurt and mix well.
Now add in the dry ingredients and fold gently. Use a spatula to combine the batter well. Once it is combined, divide it into two bowl.
To one bowl, add in melted and cooled cocoa chocolate mixture and fold gently. This is your chocolate flavoured batter.
Now take the loaf pan, spoon banana batter and then chocolate batter. Spread evenly, You can use a knife to swirl the cake lightly. Now place this into the preheated oven and bake for 1 hour and 15 mins.
Insert a toothpick to check whether the cake is done, if it comes out clean then it is done.
Remove it from oven, cool it down for 15 mins in the cake pan. Now gently remove the cake from the pan. Place on a cooling rack and let it cool completely.
