3 to 4 cups Idli Batter Oil as needed for making paniyaram For Seasoning: 1 tablespoon Oil 1 teaspoon Mustard Seeds / Kaduku 1 teaspoon Urad Dal / Ulundu Paruppu Asafoetida / Hing / Kaya Podi - a pinch Curry Leaves a sprig 12 to 15 chopped finely Shallots / Sambar Onion 2 chopped finely Green Chilli 1 tablespoon finely chopped Ginger ½ cup grated Coconut Coriander leaves a handful chopped finely Salt to taste
Heat oil in a pan, add in mustard and urad dal. let them splatter.
Add in asafoetida, curry leaves and mix well.
Now add in onions, ginger, green chillies, salt and saute for 2 mins.
Add in coconut and coriander leaves. Toss well.
Then add this to idli batter. Mix well.
Heat a kuzhi paniyaram pan with some oil. POur batter in and cook on low flame till it crisp up a little.
Now flip over and cook.
Remove and serve.
