For Cooking Rice:
Wash and soakbasmati rice for 30 mins.
Now boil lots of water in a pan, add in salt.
Once the water comes to a rolling boil, add in drained rice.
Boil this for 6 to 7mins till the rice is 90 percent done..It will be long and when u taste it, itwill have a little bite.
Drain it in a strainer. Cool it before adding to friedrice, the previous day rice is best for fried rice.
For Fried Rice:
Heat oil in a pan,add in ginger, garlic, chillies, onions and saute for a min on very high heat,
Add in mushrooms andtoss well for 3 to 4 mins till it is browned and cooked
Add in salt, sugarand toss well.
Add in cooked riceand toss well on high heat.
Add in soy sauce,vinegar and pepper powder. Mix well.
Add in spring onionand toss well.
Serve hot.
