Who doesn't love a piece of brittle for dessert. This nut and dry fruit brittle is all you need when you are craving for a sweet treat. This easy nut seed and dry fruit brittle is made with sugar, almonds, cashews, pistachios, raisins, sesame seeds is perfect with a cup of coffee.

Ingredients

  • 1 cup Granulated Sugar
  • ¼ cup Roasted Almonds
  • ¼ cup Roasted Cashews
  • ¼ cup Pistachios
  • 3 tablespoon Seedless black raisins
  • ¼ cup Roasted Sesame Seeds
  • 1 tablespoon Coconut Oil for greasing rolling pin

Instructions
 

  • You have to use roasted nuts for this recipe. If your nuts are not roasted, roast in a dry pan for few minutes until lightly toasted. Set aside to cool.
  • Start by caramelizing the sugar. Take sugar in a nonstick pan and cook on medium heat till it starts to melt. Don’t stir often. Swirl the pan and keep mixing so the sugar starts to melt.
  • Once the sugar is melted, Cook few more minutes until the sugar reach a light golden colour.
  • At this point take it off the heat and add all the roasted nuts, seeds and raisins and mix well. Let all the nuts and dry fruits coat the sugar syrup.
  • Immediately transfer this mixture to a parchment paper and let it sit for 2 minutes. Now grease a rolling pin with some oil, Use that to roll over the brittle so it is nice and thin.
  • Once the brittle is rolled. Set aside to cool for few hours. I let it cool for 1 hour. Now remove the brittle from the parchment paper and Cut it using a sharp knife or break it into pieces .
  • Store in an air tight container.
