Pumpkin puli kuzhambu, also known as parangikai puli kulambu, is a traditional South Indian curry which is tangy, spicy. It is made with yellow pumpkin simmered in a spicy, tangy tamarind base. It is one of the homestyle kuzhambu that is both easy to make and taste delicious. This pumpkin kulambu pairs beautifully with hot steamed rice for a satisfying meal.

Ingredients
  

  • 3 cups Pumpkin peeled and cubed

For Tempering

  • 3 tablespoon Gingelly Oil
  • 1 teaspoon Mustard seeds
  • 1 teaspoon Split White Urad Dal
  • ½ teaspoon Asafoetida
  • 2 sprig Curry leaves

For Kuzhambu

  • 10 no Shallots / Sambar Onion peeled
  • 1 large Tomato chopped
  • 1 tablespoon Red Chilli powder
  • 2 tablespoon Coriander powder
  • 2 tablespoon Turmeric powder
  • 1 tablespoon Rice Flour
  • 2 tablespoon Tamarind Pulp
  • 2 teaspoon Salt to taste
  • 1 teaspoon Sugar (Jaggery)
  • Water as needed

Instructions
 

  • Heat oil in a kadai. Add in mustard, urad dal, asafoetida, and curry leaves.
  • Now add in shallots, tomatoes and saute for 3 mins or so. Add pumpkin and saute for 4 to 5 mins, till it is well browned.
  • Add in the spice powders and saute well. Now add in rice flour and mix it through.
  • Pour in water, tamarind pulp, salt and sugar and mix well. now simmer this whole thing for 10 mins. Serve.
