Paruppu Usili Recipe (Beans Paruppu Usili Recipe)

Paruppu Usili Recipe is a popular lentil and vegetable dish all over India specially in the Iyengar community. You can make this with wide variety of vegetables including beans, string beans, carrots, banana flower, cabbage and many more. In this blog post I have shared 2 version of making paruppu usili at home with step by step pictures and video.

Equipment

Ingredients
  

  • 300 grams Green Beans chopped finely
  • ½ cup Coconut grated

For Grinding

  • 1 cup Toor Dal
  • 4 no Dry Red Chilli
  • ½ teaspoon Asafoetida
  • 1 teaspoon Turmeric Powder

For Tempering

  • 4 tablespoon Gingelly Oil
  • 1 teaspoon Mustard Seeds
  • 1 teaspoon Split Urad dal
  • Salt to taste

Instructions
 

  • Start by washing the dal. Now soak toor dal for 2 hours. Strain them in a sieve and set aside. Take dry red chilli, salt, asafoetida, turmeric in a blender and blend them first. Once they are blended add in toor dal and make them to a coarse puree.
  • Take beans and salt in a saucepan and cover it with ½ cup water. Bring it to boil and cook it for 5 to 8 mins covered on low till the beans is cooked. Set aside.
  • Heat oil in a kadai. Add in mustard and urad dal and let it sizzle. Now add in the pureed dal mixture and keep frying till it becomes crumbles and gets cooked. It will take around 10 mins.
  • Now add in the cooked beans and mix well with the dal. You can add some coconut in and mix well. Taste and adjust the seasoning. Stir fry this for 5 to 8 mins till everything is combined. Serve hot with rice and any spicy gravy like puli kulambu.

Notes

  • Instead of green beans. You can use variety of vegetables of choice.
  • I used toor dal, you can use chana dal or moong dal.
  • Make sure the dal is soaked few hours for faster cooking. 
  • Don't use water when grinding dal.
  • Make sure you add coconut in the end for fresh taste.
