Ingredients
  

  • Oil - 3 tblspn
  • Mustard Seeds / Kaduku- 1 tsp
  • Cumin Seeds / Jeerakam - 1 tsp
  • Onion - 1 large chopped finely
  • Green Chillies - 2 slit
  • Ginger Garlic paste - 1 tsp
  • Turmeric Powder - 1 tsp
  • Tomatoes - 2 chopped finely
  • Chilli Powder - 1 tsp
  • Coriander Powder - 1 tblspn
  • Brinjal - 3 cubed
  • Water as needed
  • Salt to taste
  • Black Pepper Powder - 1 teaspoon or to taste

Instructions
 

  • Heat oil in a kadai, add in mustard, cumin and let it sizzle.
  • Now add in onions, green chillies and mix well.
  • Add ginger garlic paste and turmeric powder and mix well.
  • Add tomatoes and cook till mushy.
  • Add in water and spice powders and mix well.
  • Add salt and mix well.
  • Add brinjal and cook covered till it is done.
  • Now add in pepper and toss well.
  • Serve.
